Greek Salmon

I was given an Epicure Selections collection, Good Greek. Real Fast., from my Epicure Consultant, Cheryl.   Epicure Selections was founded in 1997 by  Sylvie Rochette and is a Canadian Company, passionate about good food and clean eating.

We were having Salmon.  Sometime I find that you get a really “fishy” taste with salmon and so we don’t eat it too often.  I wanted a flavourful dinner without too much fuss or fishiness.  Do you ever pick your spices by smell?  I opened the jar or Greek Dressing Seasonings and WOW!  What an aroma; herbs, garlic; onion; bell peppers.  mmmm.

Salmon Fillets – 350 degrees for 30 minutes

In a small baking dish, lay the fillets out and drizzle with olive oil and balsamic vinegar.  Add Epicure seasonings and sea salt to taste.  Cover with tin foil and bake.  The fish should flake nicely apart yet still be moist.  Serve with fresh vegetables and rice or baked potato.
