Coconut Lemon Tarts
With so many commitments over the Christmas season, it’s easy to get overwhelmed. One way I like to ease up is to make simple desserts. My favourite is tarts, yes tarts! This recipe is so fast you can whip them up in an hour and they look like you have been working all day.
To begin with, I take out the necessity of pastry. What I mean is, I don’t make pastry, I buy tart shells. This is the biggest time saving Ever. I have a fantastic recipe for pastry, but for tarts this is the best way to go and they taste delicious. You can purchase frozen tart shells in your local grocery store.
To mix up the filling will take only a few minutes. Assemble your ingredients, along with a mix master, and get started. With the tart shells you buy, they are not so large so your filling will go a little farther.
From each recipe I got two dozen tarts. They also freeze well.
