Coconut Lemon Tarts

With so many commitments over the Christmas season, it’s easy to get overwhelmed.  One way I like to ease up is to make simple desserts.  My favourite is tarts, yes tarts!  This recipe is so fast you can whip them up in an hour and they look like you have been working all day.

To begin with, I take out the necessity of pastry.  What I mean is, I don’t make pastry, I buy tart shells.  This is the biggest time saving Ever.  I have a fantastic recipe for pastry, but for tarts this is the best way to go and they taste delicious.  You can purchase frozen tart shells in your local grocery store.

To mix up the filling will take only a few minutes.  Assemble your ingredients, along with a mix master, and get started.  With the tart shells you buy, they are not so large so your filling will go a little farther.img_3427

 

From each recipe I got two dozen tarts.  They also freeze well.

Coconut Lemon Tarts

Quick & Easy Christmas Desserts

Ingredients

  • - 2 Eggs
  • - 1 Cup white sugar
  • - 3 Tbsp lemon juice
  • - 1/4 Cup melted butter
  • - 2 1/2 Cups flaked coconut
  • - 24 Tart Shells

Instructions

  1. Beat eggs until light
  2. Add sugar, lemon juice and butter
  3. Mix in coconut
  4. Fill unbaked tart shells 2/3 full (it's ok right out of freezer)
  5. Bake at 375 for 25 minutes
  6. Chill & Serve cold
  7. They freeze well

    Does it matter if you use sweetened or unsweetened coconut?

      Hi SunshineLucy, I sure it would make little difference. I use fancy, but in a pinch have used other. If the coconut is quite small add less as it soaks up the mix pretty good.

    I had looked at the butter tarts, but this interests me, too. I love coconut. Coconut pie is my favorite while my husband’s is lemon. What a way to combine the two.
